I’ve been eating gluten-free and dairy free for four years now, and in fact, it’ll be four years as of this week when I went cold turkey off of gluten and dairy. I knew it would help my bloating, lethargy, and fatigue, and four years later, it’s still working for me. It was so easy giving up gluten and dairy. I worried it would be hard, but it really wasn’t at all.

That is, except for pancakes. I’ve dabbled in all different kinds of pancakes recipes ever since changing my diet. In my own research, I’ve found that most recipes for gluten-free, dairy-free pancakes yield more of a crepe-like experience, which I actually didn’t mind, but they didn’t offer that light, fluffy, pancake sensation. My husband says I work too hard in the kitchen, so he says for me just to make us a box of the buttermilk Bisquick. Not in my house!, I repeat, weekend morning after weekend morning.

After many iterations, I think I’ve finally come up with a fluffy pancake, and it’s pumpkin, too! And it’s nothing like a crepe. Enjoy! You need:

1 mashed banana

2 tbsp melted coconut oil

3/4 cup maple syrup

3/4 cup pumpkin puree

2 cups oat flour

1/2 cup almond flour

1/2 cup brown rice flour

1/3 cup white rice flour

1/4 cup potato starch

1/4 cup tapioca starch

2 cups almond milk

1 tsp cinnamon

1 tsp pumpkin pie spice

1 tsp vanilla

1 1/2 tbsp baking powder

1/2 tsp sea salt

avocado oil

In a large mixing bowl, first mash the banana. Add the melted coconut oil, pumpkin puree, and maple syrup, which all help to soften the banana. Whisk together, and then add in all other ingredients, whisking to combine. Add 1/2 tsp of avocado oil to non-stick skillet over medium-low heat. Add 1/2 cup batter and allow to warm, about three minutes each side. Top with my Vegan Dulce de Leche or layer 2 tbsp in between each pancake in your stack! Top with fresh fruit. Don’t be afraid to throw some chocolate chips into the recipe, too.

Makes 11-12 4 inch pancakes.
