Raw Vegan Valentine Treats!

The hours are ticking away, and you still have no plan in place to surprise your special someone tomorrow on Valentine’s day! I’ve always agreed that the best way to a person’s heart is through his or her stomach. We foodies like sweets, but we like real sugar, not fake sugar! Get that box of Valentine’s candy away from me! Here are some insanely healthy sweet treats for the sweet person in your life! All suggestions here are gluten-free, dairy-free, raw, vegan, and paleo.

1. SWEET VALENTINE HEART SMOOTHIE BOWL

1.5 organic bananas
6 frozen organic strawberries
handful of organic shredded coconut
2 tbsp coconut milk
2 tbsp maple syrup
3 ice cubes
2 chopped dates for garnish

Blend all ingredients together, and have fun decorating with dates, shredded coconut, and maple syrup!

2. PALEO CHOCOLATE ENERGY BITES

10 chopped dates
2 tbsp cacao powder
1 handful almonds
1 handful cashews
1tbsp maple syrup
hemp seeds and shredded coconut for garnish

Blend together and form into bite-sized treats or use a mold to make your favorite bar shape.

3. RAW RED VELVET VALENTINE CUPCAKES

for the icing:
1 cup cashews soaked
2 tbsp maple syrup
2 pitted dates
2 tbsp coconut oil
1 tsp vanilla powder

Blend all ingredients together in blender.

for the cake:

I adapted the recipe from the beautiful blog Earthsprout:
2 medium beets (1.5 cups after pulsing in blender)
8 dates
1/3-1/2 cup cacao powder
1/2 cup almonds
2/3 cup organic unsweetened shredded coconut
1/4 cup flax meal
2 tbsp maple syrup
1 tsp coconut oil
pinch of sea salt
1/4 tsp vanilla powder- I use Bourbon Madagascar Vanilla from Whole Foods

Blend the beets into pulp. Rinse the blender. Blend the remaining ingredients and scoop into cupcake papers. Have fun icing and decorating! So fun and so easy!
