Sunday Pancakes!

In San Francisco, Sunday = brunch. As fun as that scene can be in a city full of foodies and #glutenfree #cleaneaters, let’s not forget the joys you can whip up in your own kitchen!

I’ve been in a pancake mood recently. I’ve been exclusively using Bob’s Red Mill Gluten-Free Pancake Mix. Let me know your own recommendations for gf pancakes. Here’s what I’ve come up with, in no particular order:

1. The Basic w/ Protein


OK, maybe it’s not so basic. Every time I make Bob’s Pancake Mix, I include a sliced-up banana in the batter, along with a tablespoon of cocoa powder— surprise! I topped these with hardened coconut cream from the fridge; I can’t believe it’s not butter. Hehe. The coconut taste is actually not that strong, so it’s a great butter substitute! I’ve been using this coconut cream from Trader Joe’s. I also use it to make dairy-free chocolate mousse, like I did for Thanksgiving dessert. I put a crazy-rich slab of Ghirardelli 100% cocoa atop the coconut butter. I always have those Trader Joe’s Sweet Chicken Apple sausages on hand for protein cravings.


2. Summer Berry Blast Pancake


Again the batter of course has bananas and coca powder.  I’ve topped the pancake with coconut cream again, which melted theatrically down the pancake’s side this time (nom nom). I defrosted my ever-ready stash of Safeway’s frozen mixed berries and tossed those on top. They are really not sweet (according to me), so I drizzled the whole production with honey! (Peanut butter goes great atop this particular pancake!)

3. Cherry Chocolate Almond Butter Bliss Pancakes


Pancake #3 may be my personal fave. I went heavy on the cocoa powder and added a tbsp of almond butter to the batter. Almond butter serves as a great butter atop this pancake along with hardened coconut cream. I topped with Safeway’s Frozen Cherries that I always have on-hand in the freezer. I always keep slivered almonds in the cupboard, too.

4. The Classic Banana Pancake


I’m thinking in the future that melty chocolate chips will go great inside this one. Even with bananas in the batter, I topped with sliced banana, shredded coconut from Trader Joe’s, and sprinkled Trader Joe’s chia seeds. I drizzled with organic maple syrup.

I have a can of organic pumpkin sitting in the pantry. My next mission — gluten-free pumpkin pancakes! I’ll let you know how that goes. I may even sneak in some dark chocolate chips!
