Have You Had Your Greens Today? My Top 3 Daily Smoothies

Will Ferrell once sang “Mondays, how I hate Mondays. They make me so steamed. Weekends! I prefer the weekends!” Well, the weekend has ended, and it is indeed Monday. Here are my favorite smoothie recipes to cool you down from being so steamed, and smoothies are a great way to kick the week off healthy— they ensure you’re getting tons of vitamins first thing Monday morning. The star of the show in each recipe is some kind of greens— raw spinach, kale, or chard. Is there any other kind of green that you recommend for smoothies?

The following three smoothies are gluten-free and dairy-free.

 

1. Pink Berry Smoothie Granola Bowl

You need:

3/4 cup frozen mixed berries (strawberry, raspberry, blueberry, blackberry)- Safeway sells this bag

1 cup almond milk, coconut milk, or rice milk

1 banana

2 tbsp almond butter, peanut butter, or cashew butter

handful of raw spinach leaves or other greens

handful of Udi’s gluten-free granola

optional: a pinch of chia seeds, a tbsp of cocoa powder, 3 or 4 dates to sweeten things up, or honey!

It’s time to kick your empty carb cereal and lactose milk to the curb. I pulse all the ingredients together in my Ninja blender from Target, usually in the to-go cup so that I can drink it during my hour-long commute to work. Otherwise eat it like cereal from a bowl!

 

2. Avocado Coconut Smoothie- perhaps my very favorite!

You need:

1 banana

1/2 avocado

1 handful of raw greens

1 handful of raw cashews

1 handful of dry toasted pecans

3 – 4 pitted dates

1 cup coconut milk

This smoothie comes out surprisingly sweet from the dates and creamy from the avocado and coconut milk!  I can tell people are jealous at red lights as they see me drinking it in my car.  After all, most people with long commutes tend to grab a bagel or muffin, and that is a guaranteed energy drop at the beginning of the week right when you need it most! A great optional topping for this particular smoothie could be Bob’s Red Mill Gluten Free Muesli.

3. Dark Cherry Chocolate Spinach Smoothie

This cherry chocolate smoothie by Spinach 4 Breakfast tastes like dessert!

 

This recipe comes from Alyssa and Maria at Spinach 4 Breakfast, an amazing food blog offering healthy, energizing recipes. I only subscribe to a handful of blogs, and Spinach 4 Breakfast is one of them! I particularly like this recipe of theirs, because to me it always tastes like dessert, but I have it for breakfast, so I feel very sneaky to be getting in my chocolate so early in the day!

Here’s what I use:

1 banana

2 generous handfuls of dark cherries from Safeway

2 tbsp almond butter

1 cup almond milk

1 tbsp cocoa powder

1 generous handful of raw spinach leaves

Dates could go great in this smoothie

Which smoothie suggestion is your favorite? Do you see now why I get so excited about smoothies (and take endless pictures of them)?! They are so pretty, so tasty, and so healthy! Remember that you can always add cocoa powder to any smoothie! I’m hard pressed to find any smoothie that doesn’t taste great with chocolate added in.     Frozen fruit medley and berry medley
    Fruit flavored yogurt
    Honey
    Cranberry juice
    Chia Seeds
    Hemp Hearts
    Egg
    Carrots
    Kale
    Banana

      Good gracious Lisa- eggs?! Are they scrambled or egg whites? I’ve never had hemp hearts before, either. You are too cool! Are you using a Vitamix? Or a Ninja? What kind of blender?
